Stocks, Soups and Sauces - Session II

This class will cover the basics of stocks and soups; including the needed vocabulary and basic culinary math to scale recipes. The class will also discuss the 5 Mother Sauces (marinara, velouté, béchamel, hollandaise, brown sauce) and how they can be modified. We will make eggs benedict as a class and each student will make either a marinara or mornay sauce. Michael Bell has been working in professional kitchens since 2000. He graduated with honors from SMCC Culinary department in 2011 and has spent the last three years as a Sous Chef at Joseph’s by the Sea in OOB. Session II: Tuesday, 2/27, 6:00-8:00pm, GMS, $24 (The 2 sessions are the same class offered on different dates.) Cooking classes require a 5 day cancellation notice as they require the advance purchase of perishable products. No shows and late cancellations will not be refunded.
